Recipe: Turkey Stuffed Bell Peppers

Ground Turkey

The excellent source of protein in this dish comes from ground turkey.

Red or Yellow Bell Peppers

The veggies in this dish come in the form of a vessel for the ground turkey. Bell peppers are a source of vitamin C and offer us an opportunity to eat the rainbow! By eating a variety of colors, we can get all the nutrients that naturally occur in foods.

Rice

Either brown or white rice is fine for this recipe. Rice adds a portion of starch to this dish and gives our brain its preferred fuel source -- carbs!

Tomato Soup

A creamy tomato soup really ties this dish together by adding flavor to the turkey in the bell peppers. Canned tomato soup might already be in your pantry waiting to be used, or feel free to make your own!

Ciara Cray

Ciara Cray is earning her Bachelor’s in Food and Nutrition and working toward becoming a Registered Dietitian Nutritionist (RDN).
